We've been damning the torpedos (more nautical references I don't fully understand) and moving full speed ahead. Roasting, cupping, reflecting, and then repeating has become the rythm. The purpose of "cupping" is to fine tune our roasting operation, to make sure the coffee is up to our standards before we deliver them to your door. Here is a picture of a typical afternoon in our kitchen.

Basically it involves a lot of slurping and spitting. Afterwards we take some notes and plot our next roasting course. We've also completed a very clean fender install on a suspension fork of which we are disproportionately proud. It wasn't rocket science but the result was satisfying.

I guess you can take the bike nerd out of the bike shop but you can't take the bike shop out of the nerd.

We've been pulling some late nights trying to getting everything ship shape (not that I have a concept of what "ship shape" looks like) in preperation for our Oct 31st opening date. Let's just say it hasn't been easy. The shiny ribbon on all this work is that we plumbed in our Clover, that's right, a Clover 1s! How crazy is that? It's not a piece of equipement that is necessary for a start up roaster, but my previous employment with the Coffee Equipment Company during the Starbucks aquisition put me in the right place at the right time. Zander and Randy ponied up in a very generous way and we all ended up with one of these fabulous $11K "automated brewers". :) This corner contains the tools we will use to shape our flavor profiles for your coffees.

We have some coffees arriving this week and I can't wait to begin getting to know their intimate details.

Well I finally broke free of working for the man..err...left a comfortable job with good pay and benefits. I often wonder if starting up a coffee roasting operation in Seattle of all places is such a good idea. Well, I've never been one to make decisions purely based on logic so I went with the emotional side once again. My love of coffee (and bikes) will not be denied. Be sure to check back often and see how we are progressing in our march toward out October 31st launch date. RW

We have some Batres Farms goodness in the house!

Sure the website was dead to us but our love of coffee was flurishing on our "realsite". The Pacamara was expensive but it is living up to its purchase price in the cup. The natural, while not quite so mind blowing is a note worthy coffee in its own right with a nice body and some stunning berry notes.

Our new baby was dropped off today and we couldn't be more excited. I did roast on it once last week with mixed results so I am looking forward to getting to know this piece of equipment and make it sing. Here are some pics.

Trying out this website layout. Let us know what you think. We had a minor setback trying to purchase our production roaster. Everything was set to go, and then the previous owner backed out of the deal. The whole situation is quite a bummer. If you know someone who is selling a 10-15kg roaster drop me a line. :)
